THE SCIENTIFICAL ASPECTS AND MODERN RUSSIAN EXPERIENCE OF FOODSTUFFS ENRICHMENT WITH MICRONUTRIENTS

Among alimentary factors of especial significance for human health the most important role is played by full-value and regular supply of his body with all essential micronutrients, i.e. vitamins and mineral substances.

The scientifical and technological aspects of food products fortification with micronutrients (vitamins, minerals) for human consumption and therapeutical and preventive uses are developed.

Scientifically argumented choice of fortificated products — bread, confectionary, cereals and biological active supplements in the form of instant drinks.

Scientifically argumented choice of biological active supplements for fortification (vitamin and vitamin-mineral premix; fat- and water-soluble preparations of b-carotene, vegetable polifunctional additives) the effective technology of its obtaining are developed.

The scientifical argumented and effective technologies of fortification food products with micronutrients in accordance with medical-hygienic recommendations and standards are developed.

The recepies and technology of production of bread, confectionary, cereal products, fortificated with micronutrients, as well as biological active supplements, balanced on vitamin-mineral composition, are developed.

The efficiency of developed products in nutrition of the different groups of children and adult population is demonstrated.
