CARBOHYDRATES: NEW APPROACHES TO THEIR PHYSIOLOGICAL FUNCTIONS AND ROLE IN NUTRITION

The author discusses new approaches to the classification and structure of various classes of carbohydrates, their digestion an absorption in the gastrointestinal tract. Special attention is paid to new ideas concerning resistant starches and the glycemic index of products. New interpretations of the importance of carbohydrates in nutrition of adults and children summarized in the expert report of FАО/WHO are presented. In the light of the given data, the problem of the optimal quota of carbohydrates and sugars in nutrition of Russian children is discussed, and the principles of forming the habits of rational consumption of sugar and sweets are considered.
