NEW METHOD OF DEFINITION OF RELATIVE BIOLOGICAL VALUE OF THE PROTEIN COMPONENT OF FOODSTUFFS

The method of definition of biological value of foodstuffs on protozoa Tetrahymena pyriformis with use of principles of impedance technology is developed. Advantages of an impedance method of an estimation of biological value of foodstuff are profitability, high accuracy, sensitivity and reproducibility. As a result of an estimation of biological value of skilled industrial samples of canned food for a children's feed is shown, that the introduction in the recipe with components rich of protein leads to increase of relative biological value of products.
