The paper deals with a long-term research in the field of development of the hygienic principles of nutrition and water discipline of colliery miners. Biological and socio-economic aspects of catering services of colliery miners, requirements for the caloric values of food, the content of protein, fat, carbohydrates, the basic vitamins and mineral salts, dietary regimen, the range of food in the menu, the problems of catering services in pit-bare and the norms of water consumption under the ground are discussed.
